Vegan Chocolate-Coffee Cupcakes

Whether you have a sweet tooth or not, I guarantee you’ll enjoy my light and delicious cupcakes!

This recipe was put together in mind for my wonderful mother, who isn't a huge cake lover, but does indeed love her coffee..very much so!

If you too want something quick, easy and as equally scrumptious, then do give this recipe a try. Bake together or share with your loved ones, not just this Mother’s Day, but any day of the year!



Ingredients


For the Cupcakes

150g Flour

4 tbsp Raw Cacao Powder

3 tbsp instant coffee

1 tbsp baking powder

2 tbsp ground flax meal (this will be your 'flax egg')

150g soft dark sugar

110g vegan butter

225ml soya milk (+ extra 3 tbsp for mixing)


For the Icing

1 tbsp instant coffee

20g vegan cream cheese

1 tbsp cacao powder

5 tbsp icing sugar





Method


1. Preheat oven to 180C/350F/Gas 4, and line a 12-hole muffin tin with paper cases.

2. Combine coffee with 2 tbsp water, and stir well until smooth.

3. To make your ‘flax egg’, combine ground flaxseed with 3 tbsp nut milk, and set aside until absorbed. It should resemble a ‘jelly-like’ substance.

4. In a medium sized bowl combine dry and wet ingredients, including the diluted coffee and flax egg. Mix everything using an electric whisk.

5. Spoon mixture out evenly into cases, filling in about half of the cases.

5. Bake in the oven for 22minutes, or until a skewer inserted into one of the cakes comes out clean. Set aside to cool for 10 minutes, then remove from the tin and cool on a wire rack.

6. For the icing, go ahead and dilute the instant coffee - adding a couple of drops of water to make it lump-free. Combine with the cream cheese, cacao powder and gradually add the icing sugar, mixing well until completely smooth.

7. Coat the cupcakes with the icing and enjoy!
